Ingredients

🧈 1 stick of butter (1/4 cup or 6 tbsp)
🧅 1/2 onion (small diced)
🌶️ 2 habanero peppers (finely chopped and seedless)
🫑 1 orange bell pepper (small diced)
🌾 1/2 cup all-purpose flour
🥛 4 cups of heavy cream
🧂 Salt to taste
🐔 Chicken bouillon to taste
🧄 Garlic powder to taste
🧀 4 cups of shredded Colby cheese
🌶️ 1/4 cup of Valentina sauce
🎨 Orange food colorant or red and yellow
🫒 1 can (3.8oz) sliced black olives
🧅 Chopped red onion (for garnish)
🌽 Blue corn tortilla chips (for serving)


Instructions

1- Melt Butter:

  • In a large saucepan over medium heat, melt the butter.

2- Sauté Vegetables:

  • Add the diced onion, habanero peppers, and orange bell pepper to the melted butter. Sauté until the onions are translucent and the peppers are softened.

3- Stir in Flour:

  • Gradually add the all-purpose flour to the sautéed vegetables, stirring continuously to form a roux. Cook for about 2-3 minutes until the mixture thickens and lightly browns.

4- Add Cream:

  • Slowly pour in the heavy cream, whisking constantly to avoid lumps. Allow the mixture to simmer gently.

5- Season:

  • Add salt, chicken bouillon, and garlic powder to taste. Simmer for a few more minutes to let the flavors meld.

6- Incorporate Cheese:

  • Gradually add the shredded Colby cheese, stirring until completely melted and smooth.

7- Flavor Burst:

  • Stir in the Valentina sauce, adding it little by little until you reach your desired level of heat.

8- Coloring:

  • For the perfect Halloween vibe, add orange food colorant. If using red and yellow, start with equal parts and adjust until the desired orange hue is achieved.

9- Add Olives:

  • Drain the can of sliced black olives and add them to the dip, stirring gently.

10- Garnish and Serve:

  • Transfer the dip to a serving bowl. Garnish with chopped red onion and serve alongside blue corn tortilla chips.
