🍅 2 Roma tomatoes
🧅 1/2 onion
🧄 2 garlic cloves
💧 12 cups of water or chicken broth
🫒 2 tablespoons of cooking oil
🧂 Salt to taste
🐔 1 cube of chicken bouillon (optional)
Instructions
1- Prep the Veggies:
- In a blender, add the Roma tomatoes, onion, garlic cloves, and a splash of water. Blend until smooth and set aside.
2- Brown the Noodles:
- In a large pan, heat the cooking oil over medium heat. Add the Fideo noodles and fry them, stirring frequently, until they turn golden brown. Be attentive to avoid burning.
3- Combine Ingredients:
- Once the noodles are perfectly browned, reduce the heat slightly and carefully pour the blended tomato mixture into the pan. It may splatter, so take caution.
4- Simmer the Soup:
- Add the remaining water or chicken broth to the pan. If using water, mix in the chicken bouillon cube for added flavor. Stir everything together and season with salt to taste.
5- Cook the Noodles:
- Allow the soup to simmer, uncovered, for approximately 10-15 minutes, or until the Fideo noodles have expanded and become tender.
6- Serve and Enjoy:
- Once cooked, serve the Sopa de Fideo hot. For additional flavor, garnish with fresh lime juice or accompany the soup with warm, freshly made tortillas.
