Instructions
1- Prepare the Meatballs:
- In a large bowl, combine the ground beef, cumin, egg, and bread crumbs. Season with salt and pepper to taste. Mix thoroughly using your hands and set aside.
2- Blend the Tomatoes:
- In a blender, combine the Roma tomatoes with 1 cup of chicken stock. Blend until smooth, and then pour the mixture into a large pot.
3- Blend the Vegetables:
- Add the onion, garlic cloves, poblano pepper (seeded), cilantro, jalapeños, and bell pepper into the blender. Pour in 1 cup of chicken stock and blend until smooth. Add this mixture into the pot with the tomato blend.
4- Add Liquids to Pot:
- Pour the remaining chicken stock and the water into the pot. Stir in the tomato and chicken bouillon.
5- Heat the Soup Base:
- Heat the soup over medium-high heat until it is hot.
6- Form and Cook Meatballs:
- Using a cookie dough scoop or your hands, form small meatballs from the beef mixture. Carefully add the meatballs into the hot soup base.
7- Add Rice and Simmer:
- Once all the meatballs are added, stir in the white rice. Cover the pot with a lid and let it cook on high heat for about 20 minutes, or until the meatballs are cooked through and the rice is tender.
8- Serve and Enjoy:
