Ingredients:
🧅 1/4 onion, chopped
🧄 1 garlic clove
🌿 1/2 cup chopped cilantro
🍚 2 cups quinoa
🥄 2 tablespoons oil
💧 4 cups water
🧂 1 tablespoon chicken bouillon
🍋 Salt to taste
🍈 Half lime (the peel)
Instructions:
- Preparation:
- Begin by chopping 1/4 of an onion finely. Mince the garlic clove and chop cilantro into small pieces.
- Rinse 2 cups of quinoa in a sifter under cold water to remove any bitterness. Set aside.
- Cooking:
- Heat 2 tablespoons of oil in a saucepan over medium heat.
- Add the chopped onion and garlic, sautéing them until the onion is translucent and the garlic is fragrant, typically about 2-3 minutes.
- Incorporate the rinsed quinoa into the pan, stirring for about a minute to allow it to lightly toast.
- Simmering:
- Pour in 4 cups of water. Add a tablespoon of chicken bouillon and a pinch of salt to the pot.
- Bring the mixture to a boil over high heat.
- Once boiling, add the peel of half a lime for an aromatic essence.
- Finishing Touches:
- Reduce the heat to a low setting and cover the pan. Allow the quinoa to simmer until the water is absorbed, usually about 15-20 minutes.
- Add the chopped cilantro just before the water is fully absorbed. Stir gently to combine.
- Once cooked, remove from heat and leave covered for an additional 5 minutes.
- Serving:
- Fluff the quinoa with a fork before serving. Garnish with additional fresh cilantro and serve alongside a wedge of lime for an extra burst of freshness.
