Instructions:
- Prep your ingredients by slicing the red onions, tomatoes, and shredding the lettuce leaves. Wash and dry the microgreens and cilantro.
- Take one spring roll wrapper at a time and dip it briefly in room temperature water. Do not soak it; just make it pliable enough to roll.
- On a clean working surface, lay out the softened spring roll wrapper.
- Start by placing a few strips of the red onion, tomato, and shredded lettuce on the wrapper.
- Add a few strips of leftover chicken shawarma on top of the veggies.
