Ingredients
🥫 1 (25 oz) can of Mexican-style hominy
🥓 12 oz of smoked bacon
🧅 1/2 onion, diced
🧄 3 garlic cloves, minced
🌶 3 jalapeños, chopped
🌶 1/2 tsp cumin powder
🌶 1 tsp chili powder
🌶 1 tsp paprika
🍅 2 tbsp tomato and chicken bouillon
🌿 1/4 cup of chopped cilantro
🧂 1 tsp salt
⚫ 1 tsp black pepper
💧 Water
Instructions
1- Prepare the Ingredients:
- Cut the bacon into small pieces.
- Dice the onion, mince the garlic cloves, and chop the jalapeños.
2- Cook the Bacon:
- Add the bacon pieces to a pot on high heat and cook for about 10 minutes until crispy.
3- Sauté Vegetables:
- Add the diced onion to the pot and cook until it becomes translucent.
- Stir in the minced garlic and chopped jalapeños, cooking for another 2-3 minutes.
4- Add Spices and Bouillon:
- Season the mixture with cumin powder, chili powder, and paprika.
- Stir in the tomato and chicken bouillon until well combined.
5- Add Hominy and Simmer:
- Add the Mexican-style hominy to the pot and cover the mixture with water.
6- Season and Cook:
- Sprinkle in the chopped cilantro and season with salt and black pepper.
- Adjust seasoning as needed.
- Bring the mixture to a boil.
7- Simmer to Desired Tenderness:
- Once it starts boiling, reduce the heat to a simmer.
- Cook until the vegetables and hominy reach your desired level of tenderness.
