Ingredients:
For the Vaca Frita:
- 🥩 2lb beef chuck
- 🌿 2 bay leaves
- 🧂 2 teaspoons salt
- 💧 1 cup of water
- 🧄 3 garlic cloves, minced
- 🌶️ 1 teaspoon black pepper
- 🍋 2 large limes
- 🧅 1 onion, sliced
- 🛢️ Cooking oil
For the Rice:
- 🍚 2 cups of rice
- 🧄 1 teaspoon garlic powder
- 🧂 1 teaspoon salt
- 💧 3 cups of water
- 🌿 Chopped parsley for garnish
Instructions:
- Prep the Beef:
- Sear the beef chuck on all sides in a hot pan with a little cooking oil.
- Add 1 cup of water, salt, and bay leaves to the pan.
- If using a pressure cooker, cook on high for 45 minutes. Alternatively, you can simmer in a pot until the beef becomes tender and easy to shred.
- Marinate the Beef:
- Once the beef is cooked, shred it using two forks.
- In a bowl, combine the shredded beef with minced garlic, black pepper, and lime juice, ensuring the meat is well-coated.
- Allow the beef to marinate for at least 30 minutes for optimal flavor absorption.
- Cook the Beef to Crispy Perfection:
- Heat cooking oil in a skillet over medium-high heat.
- Add the marinated beef and fry until it becomes half crispy.
- Introduce the sliced onion into the skillet and cook until translucent.
- Prepare the Garlic Rice:
- Rinse the rice under cold water until the water runs clear; drain well.
- Place the rice in a rice cooker or pot, adding garlic powder, salt, and 3 cups of water.
- If using a pot, bring to a boil, then reduce heat to low, cover, and let simmer for 10-15 minutes or until water is absorbed and rice is tender.
- Serve:
- Plate the crispy Vaca Frita with a generous side of garlic rice.
- Garnish with chopped parsley and accompany with lime wedges for an extra citrusy kick.
Cooking Tips:
- For extra crispy Vaca Frita, ensure that your skillet is adequately hot before adding the beef.
- The marination time can be extended for a more intense flavor.
