Air Fryer Mexican Rice

Ingredients:
🍚 2 cups long-grain white rice
💧 4 cups hot water
🧅 1/4 onion, chopped
🧄 2 cloves garlic, minced
🍅 2 tbsp tomato and chicken bouillon
🌶️ 1 jalapeño
🥬 4-6 stems cilantro
🛢️ 5 tbsp neutral cooking oil
Instructions:
- Prepare the Rice: Begin by rinsing the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.
- Initial Air Fry: In the air fryer basket, mix 3 tablespoons of cooking oil with the rice. Spread the rice out evenly, then drizzle the remaining 2 tablespoons of cooking oil over the top. Air fry at 400°F (200°C) for 5 minutes.
- Stir and Continue: After 5 minutes, stir the rice to ensure even cooking. Air fry for an additional 5 minutes.
- Add Aromatics: Stir in the chopped onion and minced garlic. Air fry for 2 more minutes at 400°F (200°C).
- Add Flavor: Add the tomato and chicken bouillon, followed by the hot water, jalapeño, and cilantro. Stir to combine.
- Final Cook: Lower the air fryer temperature to 375°F (190°C) and air fry the rice for 15 minutes. Check to see if the rice has absorbed all the water. If it’s still wet, air fry for an additional 3 to 5 minutes.
- Serve: Once the rice is fully cooked and water is absorbed, fluff it with a fork and serve warm as a side dish to your favorite meals.
