Ingredients:
🌽 8 corn tortillas
🍅 Salsa:
🌰 1 shallot
🌶 2 habaneros
🧄 2 garlic cloves
🌶 4 jalapeños
🧂 1 tsp salt
🌿 1/4 cup fresh cilantro
🥑 2 tbsp avocado oil
🍖 Meat:
🥩 1 lb ground meat
🧂 1 tsp salt
🧂 1 tsp black pepper
🌿 1/2 tsp ground cumin
🧄 1 tsp garlic powder
🥗 Toppings:
🥬 Shredded cabbage
🍅 Diced tomato
🍋 Lime juice
🥑 Avocado
🥛 Mexican crema
Instructions:
- Prepare the Salsa:
- In a pot, add the shallot, habaneros, garlic, and jalapeños. Cover with water and bring to a boil. Cook for about 20 minutes.
- Transfer the boiled vegetables to a blender. Add just enough cooking water to blend without making the salsa too runny.
- Add fresh cilantro, 1 tsp of salt, and avocado oil to the blender. Blend until smooth.
- Prepare the Meat:
- In a mixing bowl, combine the ground meat with salt, black pepper, cumin, and garlic powder. Mix well.
- Divide the seasoned meat into 8 equal portions.
- Place each portion onto a corn tortilla and spread it thinly and evenly over its surface.
- Cook the Tacos:
- Heat a griddle over medium heat.
- Place each tortilla onto the griddle, meat-side down. Cook for about 5 minutes until the meat is browned and the tortilla starts getting crispy.
