Ingredients:

🌽 8 corn tortillas
🍅 Salsa:
🌰 1 shallot
🌶 2 habaneros
🧄 2 garlic cloves
🌶 4 jalapeños
🧂 1 tsp salt
🌿 1/4 cup fresh cilantro
🥑 2 tbsp avocado oil
🍖 Meat:
🥩 1 lb ground meat
🧂 1 tsp salt
🧂 1 tsp black pepper
🌿 1/2 tsp ground cumin
🧄 1 tsp garlic powder
🥗 Toppings:
🥬 Shredded cabbage
🍅 Diced tomato
🍋 Lime juice
🥑 Avocado
🥛 Mexican crema


Instructions:

  1. Prepare the Salsa:
    • In a pot, add the shallot, habaneros, garlic, and jalapeños. Cover with water and bring to a boil. Cook for about 20 minutes.
    • Transfer the boiled vegetables to a blender. Add just enough cooking water to blend without making the salsa too runny.
    • Add fresh cilantro, 1 tsp of salt, and avocado oil to the blender. Blend until smooth.
  2. Prepare the Meat:
    • In a mixing bowl, combine the ground meat with salt, black pepper, cumin, and garlic powder. Mix well.
    • Divide the seasoned meat into 8 equal portions.
    • Place each portion onto a corn tortilla and spread it thinly and evenly over its surface.
  3. Cook the Tacos:
    • Heat a griddle over medium heat.
    • Place each tortilla onto the griddle, meat-side down. Cook for about 5 minutes until the meat is browned and the tortilla starts getting crispy.
    • Flip the tortilla, pressing the meat with a spatula to form a line. This will help when folding the tacos.
    • Let the tortilla get crispy around the edges, then remove from heat.
  4. Assemble the Tacos:
    • Add toppings like shredded cabbage, diced tomato, slices of avocado, a splash of lime juice, and a dollop of Mexican crema on the cooked tortillas.
    • Serve with the freshly made salsa.

  • For extra crispy tacos, ensure your griddle is well-heated before adding the tortillas.
