Quelites with Beans
Quelites in Mexico are young tender greens from various edible plants. Highly nutritious and versatile, they offer a delightful way to enjoy Mexican cuisine. This recipe pairs the vibrant greens with beans for a simple, yet satisfying dish best enjoyed in fresh homemade flour tortillas.
Ingredients:
🌿 A bunch of quelites (e.g., watercress)
🧅 1/2 onion, diced
🧄 2 garlic cloves, minced
🥫 3 cups of cooked beans, drained
🧈 2 tbsp of butter
🧂 Salt to taste
Instructions
- Begin by cutting the quelites into small pieces. Wash them thoroughly to ensure they are clean, then allow them to dry.
- Place a sauté pan over medium heat and add the butter. Once the butter has melted, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
- Add the chopped quelites to the pan. Cover with a lid to let the greens steam slightly and sweat for about 5 minutes.
- After the quelites have wilted, add the drained beans to the pan. Season with salt to taste and stir gently to combine all ingredients.
- Cook until the quelites are tender and well-mixed with the beans.
- Serve the mixture in fresh homemade flour tortillas for a delightful taco experience.
