Ingredients
🌶️ 3 serrano peppers
🥬 1 celery stick
🍅 1 big tomato
🧄 3 garlic cloves
💧 4 cups of water
🛢️ 4 tbsp of cooking oil
🥦 1⁄2 cup of fresh cilantro
🥩 1.5 lb of beef chuck steak (cut into strips)
🧂 2 tsp of salt
⚫ 1 tsp of black pepper
🌿 1 tsp of celery salt
🌾 1⁄2 tsp of cumin
🧅 12-14 big green onions (cebollines)
🧄 2 tsp of minced garlic
Instructions
1- Prepare the Salsa:
- In a pot, combine serrano peppers, celery, tomato, and garlic cloves. Add enough water to cover the ingredients.
- Cover with a lid and boil for 15 minutes.
- Transfer the boiled ingredients into a blender. Add fresh cilantro and some or all of the water from the pot, depending on your desired salsa thickness. Blend until smooth and set aside.
2- Cook the Green Onions:
- In a skillet over medium heat, add cooking oil.
- Add the green onions and cook until they turn slightly golden brown. Remove them from the skillet and set them aside.
3- Cook the Beef:
- Season the beef strips with salt, black pepper, celery salt, and cumin.
- In the same skillet, add the minced garlic and beef. Cook until the liquid dries up, and the beef is browned.
4- Combine Ingredients:
- Add the cooked green onions and the prepared salsa to the skillet with the beef.
- Cook for an additional 2 minutes to combine the flavors.
5- Serve:
- Serve hot, either in tacos or with rice and beans on the side for a full meal.
