Chopped Mexican Hotdog

Ingredients:
🌭 4 beef or chicken franks
🥓 4 slices of bacon
🌶️ 1 jalapeño, finely chopped
🧅 1 small onion, diced
🍅 1 medium tomato, diced
🟡 2 tablespoons mustard
⚪ 2 tablespoons mayonnaise
🍅 2 tablespoons ketchup
🌭 4 hotdog buns
Instructions:
- Prep the Ingredients:
- Finely chop the jalapeño and dice the onion and tomato. Keep these aside for later use.
- Cook the Bacon and Franks:
- Heat a skillet over medium heat and cook the bacon until crispy. Set aside on a plate lined with paper towels to drain excess fat.
- In the same skillet, add the beef or chicken franks and cook until they are heated through and slightly browned. Remove and set aside.
- Sauté the Vegetables:
- In the same skillet, add the diced onion and sauté until translucent, about 2-3 minutes.
- Add the chopped jalapeño and diced tomato. Sauté for another 2 minutes until the tomatoes soften slightly.
- Chop and Toss:
- Once the bacon has cooled, chop it into small pieces.
- Slice the cooked franks into bite-sized pieces and mix them with the sautéed vegetables and chopped bacon.
- Assemble the Hot Dog:
- Open the hotdog buns and spread mayonnaise evenly inside each bun.
- Fill the buns with the chopped mixture generously.
- Drizzle with mustard and ketchup over the top.
- Serving:
- Serve immediately while warm for best flavor.
