Ingredients
🥔 2 lbs rainbow baby potatoes
🧂 1 tsp salt
⚫ 1 tsp black pepper
🫚 1 tsp ginger powder
🍗 1 tsp chicken bouillon
🧄 1 tsp garlic powder
🥄 3 tbsp mayonnaise
🥛 3 cups heavy cream
🫒 Olive oil (for greasing)
Instructions
Prepare the Potatoes:
Thoroughly wash the potatoes and slice them thinly. It's important to ensure that the slices are uniform to promote even cooking.
Place the potato slices in a large bowl of water. Swirl them around until the water runs clear, which removes excess starch and prevents clumping.
Season the Potatoes:
Drain the potatoes and return them to the bowl.
Add 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of ginger powder, 1 teaspoon of chicken bouillon, and 1 teaspoon of garlic powder. Toss the potatoes until they are evenly coated with the seasonings.
Prepare for Baking:
Preheat your oven to 375°F (190°C).
Lightly grease an oven-safe dish with olive oil or use a cooking spray to ensure the potatoes do not stick.
Evenly layer the seasoned potato slices in the dish.
Create the Creamy Sauce:
In a small mixing bowl, combine 3 tablespoons of mayonnaise with 3 cups of heavy cream. Whisk until smooth and well-blended.
Bake the Potatoes:
Pour the creamy mayonnaise mixture over the potatoes, ensuring that they are adequately covered.
Cover the dish with foil to trap moisture and promote even cooking.
Place the dish in the preheated oven and bake for approximately 40 minutes until the potatoes are tender and the sauce is bubbly and slightly golden.
Serve:
Let the dish cool for a few minutes before serving. Enjoy the scalloped potatoes as a side dish or a main course with a salad or protein of your choice.
