Ingredients:
For the Meat:
🦬 2 lb beef chuck
🧅 1/4 onion
🧄 2 garlic cloves
🌿 2 bay leaves
🧂 Salt to taste
⚫️ Black pepper to taste
For the Red Sauce:
🌶 6 guajillo peppers, seedless
🌶 2 ancho peppers, seedless
🧄 2 garlic cloves
🌶 1 tsp paprika
🧅 1 tsp onion powder
🧄 1 tsp garlic powder
🍃 1 tsp Mexican oregano
🌿 1/2 tsp ground cumin
🧂 2 tsp salt
⚫️ 1 tsp black pepper
For the Cheese Sauce:
🧀 10 oz sharp cheddar cheese
🥛 2 cups milk
🌶 1/3 cup of juice from pickled jalapenos
🧈 5 tbsp melted butter
🌾 3/4 cup all-purpose flour
For Assembling:
🌮 Flour tortillas
🧀 Sliced colby cheese
Instructions:
- Prepare the Meat:
- Combine beef chuck, onion, garlic, bay leaves, salt, and black pepper in a pot. Cover with water, lid on, and cook on medium heat for 60 minutes or until the meat is tender and easy to shred with a fork.
- Shred the cooked meat and mix with one cup of the prepared red sauce. Set aside.
- Make the Red Sauce:
- Place guajillo and ancho peppers, along with garlic, in a pot. Cover with water, lid on, and cook for 20 minutes on medium heat.
- Once cooled, blend the peppers and garlic with paprika, onion powder, garlic powder, Mexican oregano, ground cumin, salt, and black pepper in a blender.
- Use some of the cooking liquid to help blend into a smooth sauce. Strain to remove skins and seeds.
- Prepare the Cheese Sauce:
- In a pot on low heat, combine cheese and milk. Stir occasionally until the cheese is melted.
- Mix melted butter with flour to create a roux and stir into the cheese mixture. Add juice from pickled jalapenos for additional flavor. Stir to thicken the sauce without burning.
- Assemble the Tacos:
- Heat a griddle to medium heat. Warm the flour tortillas on the griddle.
- Add a slice of colby cheese on both sides of the tortilla, top with the prepared beef mixture.
- Once the cheese on the bottom is crispy, fold the tortilla over the filling and serve immediately with red and cheese sauces on the side for dipping.
