Eggplant & Bacon Crescent Pizza

Ingredients:
🍆 1 large eggplant
🍅 1 tomato
🌿 1 cup of fresh parsley
🌶️ 2 tbsp paprika
🌶️ 1 tbsp spicy chili flakes
🌿 1 tbsp dried oregano
⚪ 1 tbsp white pepper
🧂 Salt to taste
🫒 Olive oil
🧀 6 oz Brie cheese
🥐 1 (8 oz) tube of crescent dough
🥓 5 strips of bacon
Instructions:
- Prep the Vegetables:
- Slice the eggplant into thin rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture, then pat dry with a paper towel.
- Dice the tomato and chop the fresh parsley.
- Cook the Bacon:
- In a skillet over medium heat, cook the bacon strips until they are crispy. Remove from heat, drain on paper towels, and crumble into pieces.
- Prepare the Eggplant:
- In the same skillet with a little olive oil, add the eggplant slices. Sprinkle with paprika, white pepper, and spicy chili flakes. Sauté until tender and golden brown. Set aside.
- Prepare the Dough:
- Preheat the oven according to the crescent dough package instructions.
- Roll out the crescent dough on a baking sheet to form a large pizza base, pinching the seams together.
- Assemble the Pizza:
- Evenly distribute the sautéed eggplant onto the dough, followed by the diced tomato.
- Place slices of Brie cheese across the top and sprinkle crumbled bacon over everything.
- Finish with the dried oregano and a drizzle of olive oil.
- Bake:
- Bake in the oven until the crescent dough is golden brown and the cheese is melted and bubbly, approximately 15-20 minutes.
- Garnish and Serve:
- Remove from the oven and let cool slightly. Garnish with fresh parsley before slicing and serving.
