Sopa con Carne (Mexican Meat Soup)
Sopita con Carne, or Mexican Noodle Soup with Meat, is a comforting and versatile dish enjoyed across Mexico. With each region adding its unique touch, this soup is a delightful blend of flavors and textures that can be served any time of the year. Whether you use fresh tomatoes or canned, Fideo noodles or another type of pasta, this dish is always a family favorite, best enjoyed with warm tortillas and lime wedges.
Ingredients:
🥩 1 lb. of ground beef
🛢️ 3 tbsp of cooking oil
🍜 1 (7oz) pack of noodles
🥔 2 potatoes
🍅 2 Roma tomatoes
🧄 3 garlic cloves
🧅 1⁄4 of an onion
🥣 3 tbsp of chicken bouillon
🌽 1 can of corn
🌶️ 2 jalapeno peppers
🌿 6-8 stems of cilantro
🧂 Salt to taste
💧 Water
🍋 Lime wedges to serve
🌽 Corn tortillas to serve
Instructions:
1- Prepare the Ground Beef:
- In a pan over medium heat, cook the ground beef. Season with salt and pepper to taste. Once cooked, set aside.
2- Prep the Vegetables:
- Wash and dice the potatoes.
- In a blender, combine the Roma tomatoes, garlic cloves, and onion with about one cup of water. Blend until smooth.
3- Cook the Noodles:
- In a six-quart pot, heat the cooking oil over medium-high heat. Add the pack of noodles and fry them until they turn light brown.
4- Combine Ingredients:
- Pour the blended tomato mixture into the pot with the browned noodles. Rinse the blender with additional water and add it to the pot.
- Add the diced potatoes, chicken bouillon, cooked ground beef, canned corn, jalapeno peppers (cut the tips in half), and cilantro stems. Mix well.
5- Cook the Soup:
- Cover the pot and cook on high heat until the potatoes are soft. Stir occasionally.
- Taste the soup and adjust the seasoning with salt as needed.
6- Serve:
- Serve the soup hot with lime wedges and warm corn tortillas on the side.
