Ingredients:
- 🐟 3 tilapia fillets
- 🌿 1 package Goya seasoning (cilantro and achiote)
- 🧂 Black pepper to taste
- 🧂 Salt to taste
- 🥬 1 small cabbage, thinly sliced
- 🍅 6 small tomatoes, halved
- 🥒 2 zucchinis, sliced
- 🧅 1/2 onion, sliced
- 🌶️ 3 small sweet peppers, sliced
- 🌿 3 stems of cilantro
Instructions:
Prep the Fish: Begin by seasoning the tilapia fillets with Goya seasoning, black pepper, and salt on all sides, ensuring even coverage for maximum flavor.
Prepare the Parchment Paper: Cut out large squares of parchment paper for each fillet. The paper should be large enough to fold over the fish and vegetables with room to spare for steam.
Assemble the Packets: Lay a bed of sliced cabbage in the center of each parchment square. Place a seasoned tilapia fillet over the cabbage. Surround the fish with halved tomatoes, zucchini slices, onion rings, sweet pepper slices, and a couple of stems of cilantro.
Seal the Packets: Fold the parchment paper over the fish and veggies, making small folds along the edges to seal the packets tightly, leaving some space inside for air to circulate.
Bake: Preheat your oven to 375°F (190°C). Place the parchment packets on a baking sheet and cook for about 20 minutes, or until the fish is flaky and cooked through.
