Tetelas with Refried Beans and Cheese
A traditional Mexican dish featuring masa triangles filled with creamy refried beans and melty Oaxaca cheese. Perfectly cooked on a griddle, these tetelas are great as a snack or a hearty meal.
Ingredients
🌾 1 cup of masa harina
💧 1 cup of hot water
🥓 3 tbsp of pork lard
🫘 2 cups of pinto beans with liquid
🌶️ 4 oz of chorizo
🧅 1/4 of an onion, diced
🧀 1 cup of shredded Oaxaca cheese

Instructions
1. Prepare the refried beans
o Heat the lard in a pan over medium heat. Add the diced onion and cook until translucent.
o Add the chorizo, crumbling it as it cooks, and sauté for about 5 minutes.
o Stir in the pinto beans and cook until heated through. Mash the beans until smooth. If too runny, continue stirring until thickened.
2. Make the masa dough
o In a bowl, combine the masa harina and hot water, mixing until you get a slightly sticky dough that doesn’t stick to your fingers.
o Divide the dough into six equal portions.
3. Shape the tetelas
o Flatten each dough portion using a tortilla press or by pressing with a cutting board or plate. The tortillas should be not too thick nor too thin.
o Place a spoonful of refried beans and some shredded Oaxaca cheese in the center of each tortilla. Fold the tortilla into a triangle, ensuring the edges are sealed well to keep the filling inside.
4. Cook the tetelas
o Heat a griddle or comal over medium heat. Cook each tetela for about 3 minutes on each side or until firm and lightly browned.
5. Serve
o Serve warm with salsa, Mexican crema, and shredded lettuce on the side.
