Start your day with a burst of colors and flavors with the Mexican Flag Breakfast Burrito. This recipe brings together the vibrant hues of the Mexican flag into a delicious burrito filled with savory ground beef, perfectly cooked eggs, and topped with two distinct salsas. With each bite, you'll experience the richness of Mexican cuisine, wrapped up in a convenient and hearty meal.

Ingredients:

Salsa Verde:

  • 🌶️ 4 serrano peppers
  • 🧄 1 garlic clove
  • 🧅 Small piece of onion
  • 🌿 1/2 cup fresh cilantro
  • 🍏 1 can of tomatillos
  • 🧂 Salt to taste

Salsa Roja:

  • 🌶️ 8 chiles de arbol
  • 🧄 1 garlic clove
  • 🧅 Small piece of onion
  • 🍅 1 can diced tomatoes
  • 🧂 Salt to taste

Filling:

  • 🥩 1.5 cups ground beef
  • 🥚 4 eggs
  • 🧂 Salt to taste
  • 🧴 Cooking oil

Additional Ingredients:

  • 🌯 4 flour tortillas (burrito size)
  • 🥑 Avocado to taste
  • 🍶 Mexican crema

Instructions:

  1. Prepare the Salsas:
    • Place the serrano peppers, one garlic clove, and a small piece of onion in a pot of hot water. Bring to a boil.
    • For the Salsa Verde, blend the boiled serrano peppers, one garlic clove, half of the onion piece, cilantro, and the can of tomatillos. Add salt to taste and set aside.
    • For the Salsa Roja, blend the boiled chiles de arbol, the other garlic clove, the remaining piece of onion, and the can of diced tomatoes. Season with salt to taste.
  2. Cook the Filling:
    • Heat a little cooking oil in a pan. Add the ground beef, season with salt and black pepper, and sauté until fully cooked.
    • In another pan, heat a bit more oil and scramble the eggs, seasoning them with salt.
  3. Assemble the Burritos:
    • Lay a burrito-sized flour tortilla flat. Place a portion of the cooked ground beef and scrambled eggs in the center.
    • Add slices of avocado and a drizzle of Mexican crema over the filling.
    • Fold the bottom of the tortilla up over the filling, then fold in the sides and roll until completely enclosed.
  4. Serve:
    • Top each burrito with a spoonful of Salsa Verde and Salsa Roja to represent the Mexican flag. Garnish with a leaf of cilantro.
