Potato salad is a timeless side dish that complements any barbecue or picnic spread. This version uses red potatoes for their creamy texture and is tailored to your taste with a generous helping of mayonnaise and Dijon mustard. Ingredients
🥔 1 lb of red potatoes
🥄 1 cup of mayonnaise
🟡 2 tablespoons of Dijon mustard
🌱 1/4 teaspoon of celery seeds
🧂 Salt to taste
Instructions
Prepare the Potatoes:
Wash the red potatoes thoroughly and cut them into medium-sized pieces.
Place the potatoes in a large pot, add salt to the water, and boil. Cook until the potatoes are firm in the center and just slightly overcooked on the outside, taking care not to overboil them.
Cool the Potatoes:
Once boiled, drain the potatoes and run them under cold water to halt the cooking process.
Mix the Salad:
In a large bowl, combine the cooked potatoes with the mayonnaise. Add the Dijon mustard and celery seeds.
Stir everything together until the potatoes are evenly coated.
Season and Serve:
Season with additional salt to taste, mixing well.
