This delightful one-pot dish combines the rich flavors of pork, zucchini, and corn, infused with aromatic spices to create a creamy and satisfying meal. Perfect for a weeknight dinner, this dish is both simple to prepare and deliciously comforting.

Ingredients:

  • 🌶️ 1 poblano pepper

  • 🌶️ 1 Anaheim pepper

  • 🧄 4 garlic cloves

  • 🧅 1/4 of a small onion

  • 🌿 A small bunch of cilantro

  • 💧 2 cups water

  • 🥒 2 large zucchinis

  • 🛢️ 2 tablespoons cooking oil

  • 🥩 1 1/2 lb pork meat, cut into small chunks

  • 🧂 Salt to taste

  • 🧂 Black pepper to taste

  • 🌿 1 teaspoon cumin

  • 🌿 1 teaspoon oregano

  • 🌽 1 can of corn (drained)

  • 🌽 3 tablespoons corn flour


Instructions:

  1. Prepare the Sauce:
  • Remove the seeds from the poblano and Anaheim peppers.
  • In a blender, combine the peppers, garlic cloves, onion, cilantro, and 2 cups of water. Blend until smooth and set aside.

2. Prepare the Zucchini:

  • Chop the zucchinis into bite-sized pieces and set aside.

3. Cook the Pork:

  • In a hot pan, heat 2 tablespoons of cooking oil over medium heat.
  • Add the pork chunks to the pan. Season them with salt, black pepper, cumin, and oregano. Stir and cook until the pork is browned evenly.

4. Combine Ingredients:

  • Once the pork is browned, add the drained can of corn. Sauté briefly to incorporate.
  • Pour in the blended pepper sauce. Stir and season with additional salt to taste.
  • Cover the pan and let it simmer for 15 minutes.

5. Thicken and Finish:

  • After 15 minutes, stir in 3 tablespoons of corn flour to thicken the sauce.
  • Add the chopped zucchini to the pan. Stir well, cover, and cook for another 10 minutes until the zucchini is tender and the sauce achieves a creamy consistency.

6. Serve:

  • Serve the creamy pork with zucchini and corn over steamed rice or with warm tortillas for a complete meal. Enjoy!
