Experience the essence of Alaskan wilderness cuisine with these flavorful short rib quesadillas. Mixing the richness of beef short ribs with creamy Oaxaca cheese and fresh avocado, this easy-to-prepare dish highlights a delightful blend of textures and flavors. Perfect for a quick yet indulgent meal while enjoying the serenity of nature.

Ingredients:

🥩 1 small pack of short rib beef
🧅 1/2 onion, sliced
🌿 Carne asada seasoning, to taste
🧂 Salt, to taste
🧀 Oaxaca cheese, shredded
🥑 1 avocado, diced
🛢️ Cooking oil, for frying
🌽 Corn tortillas
🌶️ Green salsa (optional, but recommended)


Instructions:

  1. Prepare the Ingredients:
    • Slice the short rib beef into thin strips.
    • Slice the onion into half-moon shapes.
    • Dice the avocado and set it aside.
  2. Cook the Beef:
    • Heat a skillet over medium heat and add a small amount of cooking oil.
    • Once the oil is hot, add the sliced onions and sauté until translucent.
    • Add the beef strips to the skillet. Sprinkle carne asada seasoning and salt over the beef.
    • Cook, stirring occasionally, until the beef is browned and cooked through, ensuring it retains its moisture. This should take about 8-10 minutes.
  3. Assemble the Quesadillas:
    • Preheat another pan or griddle over medium heat.
    • Place a corn tortilla on the pan and sprinkle a generous amount of Oaxaca cheese on one half.
    • Add a portion of the beef and onion mixture on top of the cheese.
    • Fold the tortilla in half and press down slightly with a spatula.
  4. Cook the Quesadillas:
    • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  5. Serve:
    • Carefully remove the quesadillas from the pan.
    • Open them slightly and add diced avocado.
