Ingredients:
🥩 1 small pack of short rib beef
🧅 1/2 onion, sliced
🌿 Carne asada seasoning, to taste
🧂 Salt, to taste
🧀 Oaxaca cheese, shredded
🥑 1 avocado, diced
🛢️ Cooking oil, for frying
🌽 Corn tortillas
🌶️ Green salsa (optional, but recommended)
Instructions:
- Prepare the Ingredients:
- Slice the short rib beef into thin strips.
- Slice the onion into half-moon shapes.
- Dice the avocado and set it aside.
- Cook the Beef:
- Heat a skillet over medium heat and add a small amount of cooking oil.
- Once the oil is hot, add the sliced onions and sauté until translucent.
- Add the beef strips to the skillet. Sprinkle carne asada seasoning and salt over the beef.
- Cook, stirring occasionally, until the beef is browned and cooked through, ensuring it retains its moisture. This should take about 8-10 minutes.
- Assemble the Quesadillas:
- Preheat another pan or griddle over medium heat.
- Place a corn tortilla on the pan and sprinkle a generous amount of Oaxaca cheese on one half.
- Add a portion of the beef and onion mixture on top of the cheese.
- Fold the tortilla in half and press down slightly with a spatula.
- Cook the Quesadillas:
- Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Serve:
- Carefully remove the quesadillas from the pan.
- Open them slightly and add diced avocado.
