Ingredients

🌾 1 cup dry quinoa
💧 1½ cups water (divided)
🫒 1 teaspoon olive oil
🧂 1 pinch of salt
🫒 Olive oil for greasing the pan

Instructions

1- Prepare the Quinoa:

  • Rinse the quinoa thoroughly under cold running water, agitating with your fingers until the water runs clear to remove any bitterness.

2- Blend the Mixture:

  • Transfer the rinsed quinoa into a blender.
  • Add 1 cup of water, olive oil, and a pinch of salt.
  • Blend until you achieve a completely smooth consistency.

3- Adjust the Consistency:

  • Add the remaining ½ cup of water to the mixture.
  • Blend again until the batter is smooth and pourable.

4- Cook the Tortillas:

  • Preheat a non-stick pan over medium heat.
  • Lightly grease the pan with olive oil using a paper towel.
  • Pour enough batter into the pan to coat the bottom. Tilt the pan to ensure an even spread.

5- Flip and Finish:

  • Cook until the edges start to change color and tiny bubbles form at the surface.
  • Carefully flip the tortilla and cook the other side.
  • Flip once more for a few seconds to ensure even cooking.

6- Serve:

  • Remove the tortilla from the pan and keep warm under a towel or cloth.
  • Serve as is, or fill with your favorite ingredients such as Oaxaca cheese for quesadillas, or use for tacos and wraps.
