Instructions

- Rinse the quinoa thoroughly under cold running water, agitating with your fingers until the water runs clear to remove any bitterness.
2- Blend the Mixture:
- Transfer the rinsed quinoa into a blender.
- Add 1 cup of water, olive oil, and a pinch of salt.
- Blend until you achieve a completely smooth consistency.
3- Adjust the Consistency:
- Add the remaining ½ cup of water to the mixture.
- Blend again until the batter is smooth and pourable.
4- Cook the Tortillas:
- Preheat a non-stick pan over medium heat.
- Lightly grease the pan with olive oil using a paper towel.
- Pour enough batter into the pan to coat the bottom. Tilt the pan to ensure an even spread.
5- Flip and Finish:
- Cook until the edges start to change color and tiny bubbles form at the surface.
- Carefully flip the tortilla and cook the other side.
- Flip once more for a few seconds to ensure even cooking.
6- Serve:
- Remove the tortilla from the pan and keep warm under a towel or cloth.
