Ingredients
🐷 3 lb pork butt (chunks)
🧄 1 head of garlic
🧂 2 tbsp of salt
🌿 1 tsp dried oregano
🍂 4 bay leaves
🧅 1 tbsp onion powder
🌶️ 1/2 tsp pepper flakes
⚪ 1 tsp ground cumin
🍅 1 enchilada sauce (12 oz)
🥫 1 hominy can (13 oz)
For Toppings:
🥬 Lettuce
⚪ Radish
🍋 Lime
Instructions
1- Prepare the Pork:
- In a large pot, bring water to a gentle simmer and add the pork chunks. Retain all the fat for added flavor.
2- Add Aromatics:
- Include the whole head of garlic, with the top cut off, in the pot. Simmer everything together for about 15 minutes. During this time, skim off any foam that rises to the surface to ensure the broth remains clear.
3- Season the Broth:
- Lower the heat and introduce the bay leaves, dried oregano, pepper flakes, cumin, onion powder, and salt. Let the herbs and spices meld with the broth, infusing robust flavors into the pork.
4- Incorporate Canned Ingredients:
- Pour in the 12 oz can of enchilada sauce and the 13 oz can of hominy into the pot. Stir well to combine all the ingredients.
5- Simmer:
- Cover the pot and let it simmer on medium heat for an additional 30 minutes. This allows the pork to tenderize and absorb the distinctive flavors of the seasonings and enchilada sauce.
6- Prepare Toppings:
