🌿 1/2 cup of cilantro
🍋 1 lime
🧂 1 tsp of salt
🫒 1/2 cup of olive oil
For the Egg Wash:
🥚 1 egg
💧 1 tbsp of water
Instructions
1- Prepare the Filling:
- In a skillet, heat a bit of oil over medium heat. Add the ground beef, salt, chili powder, cumin, and Mexican oregano. Stir and cook for about 2 minutes.
- Add the minced garlic, chopped onion, jalapeños, green onions, diced tomato, and chopped cilantro. Cover with a lid and let simmer for 5 minutes.
- Uncover and cook until the liquid evaporates. Set the mixture aside to cool.
2- Make the Dough:
- In a large bowl, mix the all-purpose flour, salt, and baking powder.
- Cut in the shortening using a pastry cutter or your fingers until the mixture is crumbly.
- Gradually add warm water and knead until you form a smooth, slightly sticky dough. Cover and let it rest for 20-30 minutes.
3- Assemble the Samosas:
- Divide the dough into equal-sized balls. Roll each ball into a flat tortilla shape on a floured surface.
- Cut each tortilla in half. Brush egg wash along the edges.
- Add about 2 tablespoons of the cooled filling onto each piece and fold into a triangle. Press the edges tightly to seal.
- Let the samosas air dry for about 10 minutes.
4- Fry the Samosas:
- In a deep pan, heat oil over medium heat. Fry the samosas in batches until golden brown and crispy.
- Remove and drain on a paper towel-lined plate.
5- Prepare the Chutney:
- In a blender, combine jalapeños, green onion, cilantro, lime juice, salt, and olive oil. Blend until smooth. Serve alongside the samosas.
