Instructions

1- Prep the Vegetables:

  • Start by finely chopping the red onion, asparagus, and bell pepper.
  • Dice the tomato and slice the cucumber for the salad, then slice the avocado and set aside.

2- Make the Salad:

  • In a mixing bowl, combine diced tomato, sliced cucumber, and arugula.
