Ingredients

🥄 3 tbsp pork lard
🐖 1 cup small diced pork skin
🧅 1/4 onion, small diced
🧄 1 garlic clove, minced
🍯 2 tbsp piloncillo (or brown sugar)
🟡 1/4 cup yellow mustard
🌶️ 1 chile de arbol
🍅 1/4 cup ketchup
🫘 3 cups pinto beans
🧂 Salt, to taste


Instructions

1- Prepare the Pork Base:

  • In a medium-heated pan, melt the pork lard. Add the diced pork skin and cook until it becomes golden and crispy, resembling chicharrón.

2- Sauté Aromatics:

  • Reduce the heat slightly and add the diced onion and minced garlic to the pan. Cook until the onions become translucent and the garlic is fragrant.

3- Add Sweetness and Spice:

  • Crush the piloncillo with a knife and add it to the pan. Stir in the yellow mustard, chile de arbol, and ketchup, combining well with the other ingredients.

4- Incorporate the Beans:

  • Add the pinto beans to the pan. Depending on your desired consistency, add a splash of water if necessary. Season with salt according to taste.

5- Simmer and Blend Flavors:

  • Lower the heat and let the mixture cook for about 10 minutes, allowing all the flavors to meld together. Stir occasionally to prevent sticking.
